Diğer bölgelerdeki Türkler gerçekten bu kadar farklı mı görünüyor? Eğer öyleyse neye benziyorlar?
Because of the climate and because of poverty, you can find many different types. Anatolia is a mixed geography. You can find African-like ones in Central Anatolia, German-like ones.

That's an extreme exaggeration although Anatolia is indeed geographically mixed

Central Anatolian climate is very hot and people can be dark, this is normal.
The same is true for Eastern Anatolia though. Also, winters in central Anatolia tend to be cold due to its continental climate and inland position relative to Western Anatolia. By climate Central Anatolia isn't too different from Eastern Turkey's climate

Yes, eastern Turkey has higher elevations than Central Anatolia but Central anatolia is situated on a high elevation itself and therefore the climate of it is more similar to that of Eastern Turkey in comparison to Western Anatolia

it may look a bit like but winters don't last very long and eastern Anatolia is colder right now. Of course, the east of Central Anatolia is also at high altitude.
