according to historical documents they are assimilated and started to speak georgian. but modern-day georgians are not have any kind of turkic influence on their genetics, is because kipchaks are not that much populated or because not many people do dna tests?

It's unlikely they ever assimilated but even if very few kipchaks did assimilate, many centuries after that their genetic influence wouldn't be noticable in modern day georgians anyway.
